Now that you have gathered all the ingredients and tools needed for this recipe, let’s dive into making the perfect Cinnamon Mocha Chippers!

Preparing Your Oven and Baking Sheets

Before starting on preparing the ingredients, get your oven ready by preheating it to 350°F. Line two baking sheets with parchment paper or silicone mat.

Mixing Dry Ingredients

In a medium bowl, combine 3 cups of all-purpose flour, 2 teaspoons of baking soda, 1 teaspoon of baking powder, and 1 1/4 teaspoons of ground cinnamon. Mix with a whisk until well combined. Set aside.

Creaming Butter and Sugar Mixture

In a large mixer bowl, beat 1 cup of unsalted butter softened to room temperature with 2/3 cup of granulated sugar and 2/3 cup of light brown sugar until creamy and smooth.

Adding Flavor Enhancers

Add in 4 teaspoons of instant coffee, 1/2 teaspoon of nutmeg, and 1 teaspoon of vanilla extract to the butter mixture. Beat again until everything is well-combined.

Gradually Adding Dry Ingredients

Gradually mix in the dry ingredients into the butter mixture until everything is just combined. Avoid over-mixing as this could lead to tough cookies.

Stirring in Chocolate Chips

Fold in 2 cups of chocolate chips, preferably a mix of dark chocolate and cinnamon chips. Give it a quick stir using a spatula until distributed evenly.

Scooping Dough onto Baking Sheets

Using a cookie scoop, drop balls of dough about 1 1/2 tablespoon size onto prepared baking sheets, spacing them about 2 inches apart from each other. Repeat until all dough has been used up.

Baking The Cookies

Finally, it’s time to bake our Cinnamon Mocha Chippers! Bake for about 10-12 minutes or until the cookies are firm around the edges and still slightly soft in the center.

Cooling the Cookies

Once done, remove from the oven and allow them to cool on the baking sheet for about 5 minutes. Then transfer them onto a cooling rack to cool completely.

Congratulations! You’ve made a batch of delectable Cinnamon Mocha Chippers!

Well, well, well. So you’re looking to switch things up with this recipe, eh? I can certainly understand the desire for change! Luckily, there are numerous substitutions and variations that can be made with this recipe. Here are some of my favorite options.

First up, let’s talk espresso powder. If you don’t have any instant coffee or espresso powder on hand, fear not! Simply brew a strong cup of coffee and use it in place of the espresso powder. Or, if you prefer a less intense coffee flavor, leave it out altogether.

Next, let’s talk chocolate chips. Now, I love me some dark chocolate chips as much as the next guy, but there are other options out there too! White chocolate chips would add a creamy sweetness that pairs perfectly with the cinnamon and mocha flavors in this recipe. Or try mixing it up with a combination of dark chocolate and coconut flakes for a tropical twist.

And don’t forget about the spices! Sure, cinnamon and nutmeg are always lovely additions to baked goods, but what about adding a touch of rosemary? The fragrant herb pairs surprisingly well with coffee and chocolate flavors. Or if you’re feeling really bold, swap out the cinnamon for cardamom and ginger for a spicier kick.

Finally, let’s talk about the flour. If you’re looking to make these cookies gluten-free, try swapping out the all-purpose flour for a blend of almond flour and coconut flour. It will give the cookies a slightly nutty flavor and a pleasant texture.

There you have it – plenty of options to make this recipe uniquely yours. Go forth and experiment!

Cookies so good, you’ll want to bake a batch every day!

Now that you’ve made these irresistible Cinnamon Mocha Chippers, it’s time to enjoy them with a tasty beverage that complements their flavors. A cup of coffee is always a classic choice, and for this recipe, I highly recommend serving it with a mocha coffee or a strong espresso shot. The instant coffee used in the cookie dough adds an extra layer of coffee flavor to the dessert, pairing perfectly with the cinnamon and chocolate chips.

For those who prefer tea or other hot beverages, a robust black tea or chai can also make an excellent pairing. The spices in the chai will complement the spiciness of the cookies while still allowing the mocha flavor to shine through.

If you’re feeling adventurous, try pairing these Cinnamon Mocha Chippers with biscotti! The crunchy texture of biscotti is perfect for dipping into your warm beverage of choice.

For those seeking a non-alcoholic option, milk or almond milk will complement the flavor of the cookies and provide a refreshing contrast to their rich taste. For a special occasion or late-night indulgence, you can pair these chippers with a glass of red wine, which will bring out the nutmeg and cinnamon flavors in the dessert.

Now, to make the perfect Cinnamon Mocha Chippers every time, I have some tips and tricks that will make baking cookies a breeze. So, here are my top tips to ensure that your cinnamon chocolate chip cookies turn out perfectly delicious!

Firstly, always use high-quality ingredients! Use good quality unsalted butter, brown sugar, cinnamon, and chocolate chips. Good ingredients can make all the difference in the taste and texture of your cookies. Also, make sure all your ingredients are at room temperature while making the dough.

Secondly, properly measure your ingredients. Use a proper measuring cup for dry ingredients such as flour, cocoa powder, or sugar. Spoon them into the measuring cup and level off with a knife. For liquids like vanilla extract or milk, use liquid measures.

Thirdly, be careful of not over-baking! To ensure they don’t come out too hard or too soft some additional tricks to keep in mind include lowering the oven temperature by 25°F for even baking; using silicone baking mats instead of greasing pans for a more consistent shape; and rotating pans halfway through baking.

Fourthly, don’t be afraid to experiment with flavor additions! You can add orange zest or nutmeg to give these cookies a unique flavor. If you’re feeling creative you could even try making mocha chippers by adding espresso powder in place of some of the flour!

Lastly, let your cookies cool down before serving them. This helps them to firm-up a bit and become more dunkable if you’re looking for proper “coffee shop biscotti”. Enjoy the tasty cinnamon sugar goodness with a cup of hot coffee or mocha!

Follow these tips and enjoy consistently perfect results with this recipe! Happy baking!

Delicious, modified from a chocolate cookbook recipe given to me by a gal pal. Called a chipper because that is how you will feel after eating them! These do not really spread, so if you skip the patting down step, they will stay balls.
