Step 1: Preheat Oven and Prepare Baking Dish

The first step is to preheat the oven to 350 degrees Fahrenheit. While the oven is heating up, prepare an 8-inch square baking dish by greasing it with cooking spray.

Step 2: Make the Cake Batter

In a large mixing bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of baking soda, and ½ teaspoon of salt until well combined. Set aside.

In another mixing bowl or stand mixer, beat together the egg substitute, fat-free buttermilk, and vanilla extract until smooth. Add in the granulated sugar and beat until well combined.

Slowly add the flour mixture into the wet mixture, folding it until fully incorporated. Do not overmix.

Next, fold in 1 cup of fresh blueberries and 1/2 cup of chopped walnuts until they are evenly distributed in the batter.

Step 3: Make the Crumb Topping

In a separate mixing bowl, combine ½ cup of all-purpose flour and ¼ cup of light brown sugar. Mix in 2 tablespoons of melted unsalted butter until well combined. Fold in ¼ cup of chopped walnuts.

Step 4: Assemble the Cake Batter in Baking Dish

Pour half of the cake batter into the prepared baking dish. Spread it out evenly using a spatula.

Sprinkle around one-third of the crumb topping mixture over the top of the batter.

Carefully pour the remaining cake batter over the crumb topping layer. Spread it out evenly using a spatula.

Finally, sprinkle the remaining crumb topping mixture on top of the batter layer as an even layer.

Step 5: Bake

Bake for approximately 35-40 minutes, or until a toothpick comes out clean when inserted into the center of the cake.

Step 6: Cool and Serve

Once done, remove the cake from the oven and let it cool in the baking dish for 10-15 minutes.

Serve sliced with a scoop of vanilla ice cream, if desired. Enjoy your blueberry walnut coffee cake!

Substitutions and Variations

Get ready for a flavor explosion
Get ready for a flavor explosion

Ah, the lovely blueberry nut coffee cake. This is one of my favorite types of cakes because it’s versatile and can be made with various substitutions and variations. Don’t be afraid to get creative and experiment!

For instance, if you’re allergic to nuts or just don’t like them, feel free to replace walnuts with pecans, almonds or macadamia nuts. Alternatively, you could substitute the chopped nuts altogether and sprinkle crunchy granola or oatmeal on top of the cake batter.

Not in the mood for blueberries? You can easily swap them with strawberries, raspberries, blackberries, or any other fruit you have on hand. If you want to go for a tropical twist, you could mix diced pineapple or mango into the cake batter and add coconut flakes on top of the crumbly topping.

For those looking for a healthier option, try replacing some of the all-purpose flour with whole wheat flour or almond flour. You could also use a sugar substitute such as Stevia instead of granulated sugar.

If you’re vegan or dislike eggs, use egg substitutes instead. For example, using mashed banana, applesauce mixed with baking powder, silken tofu blended with nondairy milk or commercial egg replacers – will work just as well in this recipe.

The options are endless with this delicious coffee cake. Give yourself some freedoms while experimenting with your preferred combination of ingredients to create your personalized coffee cake recipe that suits your taste buds perfectly. So why not try it today?

Tips for Perfect Results

When baking, it’s not uncommon for things to not turn out quite right. But, fear not! With these tips, you’ll be able to make a delicious blueberry nut coffee cake every time.

First tip, when mixing the wet and dry ingredients together, be sure to use a light hand. Overmixing can cause the batter to become tough and can create large air pockets which can lead to uneven baking.

Additionally, make sure you are measuring your ingredients accurately. Inaccurate measuring can throw off the balance of the recipe and result in an unsatisfactory outcome.

For best results, consider using fresh blueberries instead of frozen ones. Fresh blueberries will add a much desired texture and juiciness to your coffee cake. When folding them into your batter, be gentle so that they do not burst and release too much juice.

Another tip is to allow your eggs and buttermilk to come to room temperature before mixing them in. Room temperature ingredients blend together better than cold ones.

When making the crumb topping, this is where you can really let your creative juices flow. Consider adding some chopped walnuts or cinnamon for extra flavor and texture.

Finally, don’t be afraid to experiment with different serving and pairing options. This coffee cake is versatile enough to be enjoyed with a variety of beverages such as coffee, tea, or even a glass of milk. And who knows? You might find that adding a dollop of whipped cream or a drizzle of caramel sauce takes this cake from great to exceptional.

So there you have it. These tips will help take your blueberry nut coffee cake from good to great every time. Happy baking!

I got this from my mom, and I'm not sure I recall where she got it. The original recipe calls for cranberries, and it is lovely that way at the holidays. We are just terribly fond of blueberries, so I decided to post it accordingly. I hope you enjoy this breakfast treat :).
