One of the great things about this Weekday Coffee Cake Muffins recipe is that there are many variations and substitutions you can make to customize the recipe and switch things up. Here are some suggestions to help you get started:

– Nuts: Instead of walnuts or pecans, try using almonds or hazelnuts for a slightly different flavor profile. You could also omit the nuts altogether for a nut-free version.

– Gluten-Free: For a gluten-free version, replace the all-purpose flour with your favorite gluten-free flour blend, such as almond flour or oat flour. Be sure to use gluten-free baking powder and baking soda as well.

– Cinnamon Swirl: If you love cinnamon, try adding a cinnamon swirl to the muffins by layering cinnamon sugar with the batter in each muffin cup.

– Streusel Topping: Make a classic coffee cake-style muffin by adding a streusel topping made of butter, brown sugar, cinnamon, and flour.

– Apple Coffee Cake Muffins: Add diced apples to the batter for an apple coffee cake muffin version.

– Vanilla Muffins: Try making vanilla muffins with subtle hints of cinnamon by omitting the cinnamon in the recipe and adding pure vanilla extract to the batter.

– Cinnamon Coffee Muffins: Use coffee instead of milk in the recipe for a more pronounced coffee flavor, and add an extra teaspoon of cinnamon for good measure.

Remember that these are just suggestions – feel free to get creative and play around with other variations!

Make-Ahead, Storing and Reheating

As an experienced barista, I know that life can get busy and having a reliable make-ahead breakfast recipe is a blessing. These weekday coffee cake muffins are perfect for your meal prep routine. You can make the batter ahead of time and freeze it for up to three weeks. When you’re ready to bake them, simply defrost the batter in the fridge overnight before baking.

If you have leftovers (which is unlikely), these muffins can be stored at room temperature, tightly wrapped in an airtight container or covered in plastic wrap, for up to two days. If you’d like to store them for longer, freeze them in an airtight container or a freezer bag for up to one month.

Now, let’s talk about reheating. I know that no one likes a soggy muffin, so let me share with you my trick to reheat the muffins perfectly. If stored in the fridge, microwave each muffin for 10-15 seconds, or until warm. This will allow the muffin to regain its moisture and fluffiness. If you’ve frozen the muffins, allow them to thaw at room temperature for a few hours or overnight in the fridge before reheating.

These coffee cake muffins are perfect for mornings when you’re running late, a quick snack on-the-go, or even as a dessert paired with vanilla ice cream. Who said coffee cake can only be enjoyed at breakfast?

Tips for Perfect Results

Perfectly moist and fluffy, these muffins will have you coming back for more.
Perfectly moist and fluffy, these muffins will have you coming back for more.

As a barista and coffee enthusiast, I know the importance of attention to detail when making coffee. And this recipe, Weekday Coffee Cake Muffins, is no exception. To make these muffins really shine, here are some tips for perfect results.

1. Choose Quality Ingredients

The first tip is to use high-quality ingredients. Yes, it matters! Invest in good unsalted butter, fresh eggs, and quality flour. These ingredients affect the taste and texture of your muffins.

2. Measure Accurately

Measuring ingredients may seem like a no-brainer, but it’s crucial for baking. Follow the recipe closely and measure ingredients accurately. Use dry measuring cups for dry ingredients and liquid measuring cups for wet ingredients.

3. Room Temperature Ingredients

Baking with room temperature ingredients will make all the difference in the end result. Take the butter and eggs out of the fridge at least an hour before you start baking. This allows them to come to room temperature and mix better together.

4. Creaming Process

The creaming process is where the butter and sugar are beaten together until light and fluffy, which creates air pockets that help make your muffins rise properly. Make sure to cream the softened butter until it’s light and fluffy before adding in other wet ingredients for best results.

5. Don’t Overmix

Once all your ingredients are mixed together into a batter, be careful not to overmix! Over-mixing can lead to tough muffins with a dense crumb.

6. Streusel Topping

The streusel topping is an essential part of this recipe as it adds crunch to these soft muffins. Be sure to follow the recipe measurements when making the streusel topping so it remains crumbly while baking.

7. Test Muffin Doneness

After 18-20 minutes of baking time, it’s time to test doneness – insert a toothpick in the center of the muffin, and if it comes out clean, then it’s time to take them out of the oven.

By following these tips, you will have perfectly moist coffee cake muffins with a delicious cinnamon streusel topping. So put on your barista hat and get baking!
