Step 1: Preheat the oven and prepare the pan

In a medium bowl, whisk together brown sugar, cinnamon, and a pinch of salt until combined. Add melted butter and stir until crumbly. Set aside.

Step 3: Mix cake ingredients

In a large mixing bowl, beat softened butter and granulated sugar with an electric mixer until light and fluffy. Add in eggs and beat until well combined. Add in sour cream, vanilla extract, and mix again.

In another medium bowl, whisk together flour, baking powder, baking soda, and salt until combined.

Add dry ingredients to the wet ingredients in batches while mixing on low speed, then increase speed to medium-high for about 20 seconds to make sure everything is well combined.

Step 4: Layer cake batter and streusel topping

Pour half of the cake batter into the prepared pan. Sprinkle half of the streusel topping over the batter. Repeat with remaining batter and streusel topping.

Are you looking to add your own unique twist to this delicious vanilla streusel coffee cake recipe? There are plenty of substitutions and variations that you can try out to make it your own!

If you’re a fan of different flavors, consider swapping out some of the ingredients in the cake batter. For example, instead of using pure vanilla extract, try using a French vanilla or even almond extract for a subtle but flavorful change. You can also play with the spices by using 1/4 teaspoon of nutmeg or ginger in place of cinnamon for a warm and cozy taste.

For those looking for a healthier option, consider using gluten-free all-purpose flour or replacing some of the sugar with maple syrup or honey. Additionally, if you want to make this recipe vegan-friendly, use coconut oil in place of butter and substitute the eggs with flaxseed or apple sauce.

If you’re feeling adventurous, why not try out some variations? Make a blueberry streusel coffee cake by adding 1 cup of fresh or frozen blueberries to the cake batter. Or swap the vanilla streusel for an apple cinnamon swirl or graham cracker streusel for a dessert reminiscent of pie.

Whatever substitution or variation you choose, remember to keep track of exact measurements and adjust accordingly. Don’t stray too far from the original recipe as it may result in undesirable outcomes. And most importantly – have fun experimenting!
