Next, in another bowl or mixer, beat 1 stick (113g) unsalted butter at room temperature with 1 cup (200g) sugar and 1 tsp vanilla extract. Add in 3 eggs, one at a time, beating well after each addition. Then add in sour cream, 1/3 cup of white chocolate chips, and 1/3 cup of almond meal. Beat until everything is combined.

With the mixer on low speed or using a spatula, gradually fold the flour mixture into the egg mixture until well combined. The batter should be thick yet smooth.

Making the Almond Streusel

For the streusel topping, combine 1/2 cup (60g) flour, 1/4 cup (50g).light brown sugar,3 tbsp granulated sugar, and a pinch of salt in a small bowl. Melt quarter cup (half a stick) of unsalted butter and add it to the dry ingredients, along with half a teaspoon of almond extract. Use your hands or a fork to mix the ingredients until large crumbs form.

Assembling and Baking

Grease an 8×8-inch square baking pan with non-stick baking spray or rub with butter. Pour half of the batter into the prepared pan and spread it to the edges with a spatula. Top this layer evenly with almond streusel mixture pressing lightly into the dough.

Pour over remaining batter onto the top of your mixtures so that everything is nicely covered. Sprinkle the top of the layered batter with a handful of white chocolate chips and some chopped toasted almonds.

Make-Ahead, Storing and Reheating

“Let the aroma of this coffee cake fill your kitchen with warmth and comfort”

This white chocolate and almond coffee cake recipe is perfect for making ahead of time! If you’re planning to bake it for a special occasion or for a cozy weekend breakfast, you can easily prepare it in advance and store it until you’re ready to serve.

To Make-Ahead:

After the coffee cake has cooled completely, wrap it with plastic wrap and then with aluminum foil. Make sure it’s tightly covered so no air can get in. Store it in the refrigerator for up to 2 days. You can also freeze the cake for up to 2 months. Thaw overnight in the refrigerator before serving.

To Store:

If you have leftovers, store them covered at room temperature for up to 3 days. If you prefer, you can also store the coffee cake wrapped in plastic wrap and then with aluminum foil in the refrigerator for up to 4 days.

To Reheat:

The best way to reheat this coffee cake is by gently warming it in the oven. Preheat your oven to 350°F (175°C). Remove the plastic wrap and foil from around the cake and place it on a baking sheet. Cover loosely with foil to prevent further browning and drying out. Warm for 10-15 minutes or until heated through.

Alternatively, if you only need a single slice of coffee cake, you can reheat it in the microwave. Simply place the slice on a microwave-safe plate and heat on high for 10-15 seconds or until warmed through.

Remember that reheating will dry out your coffee cake more than serving it fresh from the oven. So try to reheat only what you need and enjoy as much fresh as possible!

Tips for Perfect Results

“Share a slice with a friend and enjoy good company over good coffee”

To get the perfect results with any recipe isn’t a cakewalk, and you want to put your best foot and your hand on the table. Fortunately, I’ve made that easier for you by sharing some tips to ensure the perfect almond white chocolate cake.

1. Measure ingredients with accuracy

Measure every ingredient as accurately as possible to achieve a balanced taste and texture. If you don’t have a kitchen scale, use measuring cups and spoons for dry or wet ingredients, respectively.

2. Room temperature ingredients

Always start with room temperature ingredients such as unsalted butter, eggs, and sour cream. Room temperature butter blends easily with sugar which is crucial in adding air into the cake for a delightful texture while room temperature eggs bind the moisture better while blending with other ingredients.

3. Mix Dry Ingredients Separately

Sift together the flour, baking powder, baking soda, and salt in a separate bowl rather than throwing all ingredients into one pot. Mixing them separately ensures even distribution of leavening agents throughout the batter.

4. Do not Overmix

Mixing too much can make it challenging to fold in white chocolate chips and almond into the batter without deflating it. It’s advisable to stop mixing once everything is well combined after adding flour.

5. Fold in White Chocolate Chips

Fold in white chocolate chips last once everything else has been mixed in place so that they don’t break down or melt inside the batter before baking.

6. Bake at Preferred Temperature

The almond white chocolate cake should be baked between 350-375°F until a toothpick inserted into the centre comes out clean. Be sure not to underbake or overbake the cake.

7. Cool Before Serving

After baking, allow it to cool on a wire rack for about 20 minutes before dusting powdered sugar on top and slicing it up for servings.

By following these tips, you will be able to make a delicious white chocolate almond coffee cake that will be enjoyed by everyone.

Bottom Line

In conclusion, this white chocolate and almond coffee cake recipe is the perfect addition to any morning coffee or tea. Its rich and moist texture, paired with the balanced flavors of white chocolate and almond make it an irresistible treat that you won’t be able to resist biting into.

With the easy-to-follow instructions and flexibility of substitutions, you can easily adjust this recipe to your liking, whether that includes adding in some crushed chocolate chips or substituting sour cream for yogurt.
